Updates 9/11

So nothing really major, well I guess kinda major but nothing that we didn't ask for. We = Sakiyah (me) and best friend Melinda

So I have two videos to upload to YouTube to show you guys. The first is a a easy meal, I made chicken Alfredo so you guys can know how to make it, only needed a few things, its probably the easiest thing that I make which is sad cause a lot of people don't seem to know how to make it right, but there is a way to make it completely from scratch or you can do it my way. I can kinda do both, I just never get my Alfredo sauce right so I'm going to tell you the easy way, but I'll put link to a few places that I've gotten Alfredo sauce recipes from. The first time I did it, it worked but it just seems after, its not working for me, lol, oh well trail and error is the joy of cooking.

The second video is about Melinda and I's adventure last night. So we like to drive, just get in the car and go and that's what we did last night. Well about 78 miles from home my tire goes flat. Tried to do everything to get help but that didn't happen, so I called my mom. Didn't want too, but like usual she was being a bitch. She blamed me for everything happening. Said it was the dumbest thing I had ever done and kept asking why we didn't take Melinda's car and why I'm always driving my car. Only thing is we use to do that, and I was kinda being used I felt but we have been taking Melinda's car a lot more often. We took her car last time so it was my turn to take mine. And I wouldn't have taken my car if I thought something would be wrong, my car had been fine up here in Jacksonville. For 78 miles it hadn't been flat. We stopped to the side of the road for less than 2 minutes and my tire was completely flat. But I've said too much, you'll see it all in the video. Wish me luck cause I really need to get out of my mom's house. ^_^

Easy Meals: Honey Barbaque Salmon


So something different but still very easy to make. Everything you need is in the video and I show you step by step how to do anything. I'm trying different methods of showing what I do and what works best. I'm trying to save for a video camera so I can just use it and edit videos on my computer so you can see it with me talking and whatnot. I like using my phone but it takes too much time to upload to youtube then use the youtube editor and I rather just have it saved on my computer for later use so wait a bit and a better system will come out. But I have a lot more to show you guys. ^_^

Easy Meals: Fried Chicken Over Pasta


So I know it seems like I'm cooking a lot more, there is no video for this because as I was doing it I wasn't really sure how it would turn out, the chicken anyway and I didn't want to give you something that turned out bad. I am going to tweet what I tell you to do so that your dish can come out better that mine. Not taste wise, so don't think this doesn't taste good, I just rather have a better looking piece of chicken is all but at last everything turned out well.

What you'll need...

A chicken breast (cut in large halfs)
can of corn
can of peas
balsamic vinegar
Italian dressing
canola oil
butter
salt
seasoning salt
accent
ground black pepper
garlic powder
pasta of your choice (penne will work best and not the shell pasta)
flour
1 egg
milk
parmesan cheese dry grated or fresh whichever you prefer


First I made my pasta, boiled water put in oil and salt so the pasta won’t stick to the pot and to get it a little flavor. Salt brings out the flavor in foods. Then when it was boiling dumped in my pasta, stirred it for about a minute or two then turned it off and let it seat in the hot water. I will stir occasionally just to make sure its not sticking.

Now for your veggies, you are going to take corn and peas right from the can, drain them, get a pot or skillet, you have to clean up later so do what you want. I used a skillet. Put in a little balsamic vinegar, only enough in the bottom so maybe like four caps of the bottom it comes in. I don’t measure anything as you can tell so this is going to be on you but I don’t use a lot of anything, then take a little butter and let that heat up on five. Throw in your corn and peas and let it simmer on 2 and stir it around so the butter and vinegar can coat everything, put it on low. Take about three squeezes of Italian dressing and put that in the skillet at well and stir it in and let it sit.

Easy enough right, now this is the slightly hard part but still doable. Now I’m going to use a deep fryer next time, but if you don’t have one, and I don’t you can still make one of your own. What you will need to make your own is a metal basket which handles, a deep pot, and a lot of oil. Heat the pot, oil inside of course, and put in your basket then whatever you are deep frying, will work the same as having a deep fryer. Now if you don’t want to do all that what you can do is do it how I did.

I made a batter to coat my chicken. I first seasoned my chicken with everything above except salt and then let it chill to the side for a few minutes. Make sure you do both sides or only one side will actually taste really good and one will be bland. You also want to put holes in the chicken, just stab it a few times with a knife or fork, it won’t do anything it just helps it cook all the way through. Two you will take about half a cup of flour, 1 egg, cheese, and enough milk to make a paste. You want it slightly thick but enough so it sticks to the chicken but make sure you get all clumps of flour out and what not.

Use a frying pan, fill half of it with oil let it get hot. Turn down to 6 and dip chicken in batter then sit it slowly in the grease. Turn it over after you see the browning of the sides and put a top over it. Now you have to make sure its cooked all the way through, that’s why we do the holes. Cover with a top, put on 5 and let it kinda simmer just to make sure its all the way cooked and check on it, you are not leaving it, you will never leave it because you don’t want it to burn and you never leave hot grease unattended.

Drain you pasta. Pasta goes down first, put some Italian dressing over it, not a lot just a little, then your veggies and then your chicken, and your final result is shown above.

Easy Meals: Sweet & Savory Beef Stir Fry


This is the end result of what you get, very pretty I guess, lol, I don't really know how to make food pretty I just put it in the bowl or on the plate and get ready to eat but hey I guess this looks okay though. So I'll take you through the process of making this savory meal which only takes about maybe 30 minutes, actually most of what I cook is really fast, it just takes some prep time, which is the longest part.

So you take beef chunks, you have buy already cut like beef stew or you can buy some normal beef and cut it yourself, just make sure you wash it will cold water and cut off any assess fat. You will need...

soy sauce
nutmeg
cinnimon
sugar
honey
seasoning salt
garlic powder
accent
pepper
olive oil
scallions

You will first rinse your scallions off and cut them into sections as big as you want, I did about an inch wide, keeping the white parts (the onion) as well and put them to the side. Taking a large bowl I mixed all my ingredients, then dumped the beef and scallions in side, mixing it with the now dark sauce that I've created. Get a baking pan, put aluminin foil inside, and dump your beef and onion into it then cover with another sheet of aluminin. Place your oven on 350 and check it every five minutes to see how its cooking. I like mine well down so I wanted to make sure it was completely dark on the top.

You next take half an onion, yellow bell pepper and green bell pepper, and cut them into strips, like so ...


You are going to cook your bacon next, putting your stove on five and leaving it there are you turn over your bacon until it is crispy and you are ready to take it out the pan. Once you have take it out you are leaving the grease, throwing in the veggies and a little sugar honey and sauce to give it a nice flavor. You will saute this on 5 for amount five to ten minutes, depends on how you like it then put it on low and leave it alone.

Your rice is very simple, take a pot, get whatever amount you want I filled it about an inch, then i cleaned it off a little. rinsing it and put an inch of water over the rice and a piece of butter and some salt. Bowl in on high til the water is gone, but it on 4 after that, flake the rice with a fork from the bottom don't stir, put a top over and let it chill for five minutes then check back. If its still glistening like it has water, turn it to two and just let it sit for a bit and when your beef is down you can eat it.

We crunched our bacon up after it was cooled and crispy. Then as the first picture above, we put the rice, then the beef, the veggies and last the bacon on top.

It may seem difficult to cook, but I promise this is where I come in, its very easy and it can be fun too.
