Easy Meals: Fried Chicken Over Pasta
So I know it seems like I'm cooking a lot more, there is no video for this because as I was doing it I wasn't really sure how it would turn out, the chicken anyway and I didn't want to give you something that turned out bad. I am going to tweet what I tell you to do so that your dish can come out better that mine. Not taste wise, so don't think this doesn't taste good, I just rather have a better looking piece of chicken is all but at last everything turned out well.
What you'll need...
A chicken breast (cut in large halfs)
can of corn
can of peas
balsamic vinegar
Italian dressing
canola oil
butter
salt
seasoning salt
accent
ground black pepper
garlic powder
pasta of your choice (penne will work best and not the shell pasta)
flour
1 egg
milk
parmesan cheese dry grated or fresh whichever you prefer
First I made my pasta, boiled water put in oil and salt so the pasta won’t stick to the pot and to get it a little flavor. Salt brings out the flavor in foods. Then when it was boiling dumped in my pasta, stirred it for about a minute or two then turned it off and let it seat in the hot water. I will stir occasionally just to make sure its not sticking.
Now for your veggies, you are going to take corn and peas right from the can, drain them, get a pot or skillet, you have to clean up later so do what you want. I used a skillet. Put in a little balsamic vinegar, only enough in the bottom so maybe like four caps of the bottom it comes in. I don’t measure anything as you can tell so this is going to be on you but I don’t use a lot of anything, then take a little butter and let that heat up on five. Throw in your corn and peas and let it simmer on 2 and stir it around so the butter and vinegar can coat everything, put it on low. Take about three squeezes of Italian dressing and put that in the skillet at well and stir it in and let it sit.
Easy enough right, now this is the slightly hard part but still doable. Now I’m going to use a deep fryer next time, but if you don’t have one, and I don’t you can still make one of your own. What you will need to make your own is a metal basket which handles, a deep pot, and a lot of oil. Heat the pot, oil inside of course, and put in your basket then whatever you are deep frying, will work the same as having a deep fryer. Now if you don’t want to do all that what you can do is do it how I did.
I made a batter to coat my chicken. I first seasoned my chicken with everything above except salt and then let it chill to the side for a few minutes. Make sure you do both sides or only one side will actually taste really good and one will be bland. You also want to put holes in the chicken, just stab it a few times with a knife or fork, it won’t do anything it just helps it cook all the way through. Two you will take about half a cup of flour, 1 egg, cheese, and enough milk to make a paste. You want it slightly thick but enough so it sticks to the chicken but make sure you get all clumps of flour out and what not.
Use a frying pan, fill half of it with oil let it get hot. Turn down to 6 and dip chicken in batter then sit it slowly in the grease. Turn it over after you see the browning of the sides and put a top over it. Now you have to make sure its cooked all the way through, that’s why we do the holes. Cover with a top, put on 5 and let it kinda simmer just to make sure its all the way cooked and check on it, you are not leaving it, you will never leave it because you don’t want it to burn and you never leave hot grease unattended.
Drain you pasta. Pasta goes down first, put some Italian dressing over it, not a lot just a little, then your veggies and then your chicken, and your final result is shown above.
